Spo\u010d\u00edv\u00e1 v anaerobn\u00edm rozkladu cukr\u016f za pomoci kvasinek a bakteri\u00ed.  V\u00fdsledkem je ethanol, kter\u00fd lze pou\u017e\u00edt jako biopalivo pro spalovac\u00ed motory.  Tato metoda je vhodn\u00e1 pro zpracov\u00e1n\u00ed odpadu bohat\u00e9ho na cukry, jako je nap\u0159\u00edklad ovoce.  V\u00fdt\u011b\u017enost ethanolu je v\u0161ak z\u00e1visl\u00e1 na druhu ovoce a efektivit\u011b fermenta\u010dn\u00edho procesu.
